These are the roasted potatoes that I make for approximately every other meal. It can be part of breakfast, lunch, or dinner depending on what you serve with it. When done right they come out golden, crispy, and delicious.
Step 1
Dice potatoes into approximately 1/2 inch pieces. Spread out on a baking pan or sheet. I use a griddle pan so the potato pieces won't stick but any baking sheet will work. Tip: if you're not using a non-stick pan or sheet, be sure to spray the pan with non-stick cooking spray before adding the potatoes.
Step 2
Turn your broiler on high. Drizzle olive oil over the potatoes, then season with salt, black pepper, cayenne pepper, dried basil, dried oregano, and garlic salt.
Step 3
Mix the potato pieces, oil, and seasonings on the pan with your hands. The goal is for each side of each potato piece to have a light coating of oil and seasonings.
Step 4
Place potatoes about 6-8 inches under the broiler for ~12 minutes. Keep an eye on them and remove them once they turn golden brown. Texture should be crispy on the outside and soft on the inside.
Step 5
Let cool for ~2 minutes before serving.
