This is Jim and Brenda's Spaghetti Carbonara recipe.
Step 1
Cook spaghetti to al dente, then drain and set aside.
Step 2
In a large saute pan, cook bacon or pancetta over medium heat about 8 minutes, until crispy and the fat is rendered. Remove bacon from pan, but keep the fat behind. Add minced garlic to the fat and cook for one minute until garlic starts to sizzle. Season with black pepper.
Step 3
Add cooked pasta to the pan. Use tongs to toss pasta around in the pan. If there is not enough fat to cook all the pasta, add olive oil. Cook for 1-2 minutes until pasta is warm.
Step 4
Add cooked bacon/pancetta back into the pan. Remove pan from heat. Add the eggs while continuing to toss the pasta around in the pan. Stir in the parmesan cheese. Once the cheese melts, the dish is done.
Step 5
Season with salt and pepper to taste. Garnish with chopped parsley. Serves four.
